Pumpkin carrot muffins

Sugar, oils, fats, cholesterol?! These are not words you want to hear describing your breakfast. So here is a twist on your typical unhealthy muffin mix muffins you might want to try out. (It’s super easy too!)

If you were at my apartment yesterday, you got to taste these, and now here is the recipe for you make them yourself! (Now isn’t that just cool?) Lemme know what you think!

Healthy Carrot Muffins


  • 1 box of carrot cake mix
  • A large handful of baby carrots (or two big carrots)
  • 2 apples
  • 1/2 cup sugar free natural apple sauce
  • about a 1/2 cup of chopped walnuts
  • 1/2 cup water
  • 3 eggs

To Do:
Preheat your oven to 350 degrees.

Throw your apples in a food processor (make them chunky!) and shred your carrots.

Put the cake mix, 3 eggs, 1/2 cup apple sauce, and 1/2 cup water in a large bowl and mix it up. The trick here is that you substitute the 1/2 cup of oil with the apple sauce! It does the same job

Add the carrots, apple chunks, and walnuts.

Fill your cupcake cups (preferable happy pumpkin ones like pictured below) with the cake mix and bake for about 10 minutes or until a toothpick comes out clean.

Eat it while it’s hot. yummmm
