Bruschetta

I had some bruschetta as an appetizer at an Italian restaurant one time, and it was SO good that I had to try and conjure it up at home. I think it turned out rather delicious, so here it is for you to enjoy!

Bruschetta

This recipe will make a decent amount- for about 4 people, or 2 hungry people.

Ingredients:

  • 6 Ripe roma tomatoes
  • 1/4 cup of chopped fresh basil
  • 3 tbsp olive oil
  • 2-3 garlic cloves, finely chopped
  • 1/2 cup cubed mozzarella cheese
  • 1/2 tsp pepper
  • 1/4 tsp salt
  • Baguette bread

To Do:
Chop tomatoes into small pieces, drain all the excess liquid and place in a large bowl.

Add olive oil, garlic, chopped basil, cubed mozzarella cheese, salt and pepper.

Stir everything and let it sit in the fridge for about an hour to soak up the flavors. You can eat it right away if you must, it will be hard to resist, I know but the flavor does get better over an hour, trust me.

Slice the baguette into thin 1/4 inch slices. Toast the bread in the toaster oven or broiler for about 23 min, until slightly crunchy. (Keep an eye on it, bread is easy to burn!)

You can prepare the bread plain, or sprinkle a little garlic powder or Parmesan cheese on top before you toast.

Top the bread with the bruschetta and enjoy the fresh taste of basil and garlic!
