Famous Guacamole

February 6, 2011

Avocados are the best thing ever.

Below you will find the recipe for my famous guacamole. It’s famous because that’s what my boyfriend calls it! :) I’ve tried recipes and used pre-made mixes for guacamole, and I still find that this way is my favorite. I usually eyeball the ingredients- the picture below shows just about how much I used of each. Personally, I would use more cilantro, but my boyfriend Matt hates it, and I can only sneak in so much with out him noticing…

Tessa’s Famous Guacamole

Ingredients:
2 ripe avocados
About half a roma tomato
Handful of diced red onion
Your desired amount of cilantro- finely chopped
Fresh ground pepper
Garlic salt
About two tbs of nutritional yeast- (my secret ingredient- this makes it taste good!)

I love the way nutritional yeast tastes on avocado! I first tried it in Oregon when I was visiting some friends. They all ate toast topped with avocado and the yeast. Almost every restaurant I went to had salt, pepper, and nutritional yeast shakers! It’s hard to describe, but it has almost a cheese flavor… If you haven’t tried it, you can get it at most health food stores.

To Do:
– First, mash up your avocados with a fork
- Chop up the tomato, onion, and cilantro- add it to the bowl
- Add the pepper, garlic salt, and nutritional yeast
- Stir it up and eat with some chips or crackers!

Guacamole is a great substitute for mayo on sandwiches- it’s really good on tuna!
