Quick Salad Dressing

Ever made your own salad dressing? I love to because I can control how much salt and processed products I consume, and the salad is the way it should be, healthy! It’s really quite simple to do and very tasty too. If you are serving a large bowl of salad, this dressing works well to mix it in the whole thing.

So I have been lacking in the blogging world this week and I completely missed Thursday’s post! I am making it up by posting on Saturday instead. I do have a good excuse though, it was my birthday! Sigh, I am now a quarter of a century old… My roommate kept urging me to ‘party,’ but I ended up just working all day and then drinking a glass of Baileys before I fell asleep on the couch. My kind of party :) Alright- on with the recipe!

Easy Mediterranean Salad Dressing

Ingredients:

  • 3 tbs olive oil
  • 3 tbs red wine vinegar
  • 1 Garlic clove, minced
  • About 3 tbs of crumbled feta cheese
  • A generous amount of fresh ground pepper
  • Parsley flakes

To Do:

Whisk together the above ingredients, adding the feta cheese last.

Toss the dressing in with your favorite  salad ingredients!

    Love it, I have everything in my pantry so I could make it right now. Those are the kinds of recipes I love.
