Also known as: Eggs on a tortilla.
So I am getting ready for a weekend camping trip, which has left me with such little time to write recipes on this blog this week! In honor of my need for quick and easy meals that require little attention while cooking, here is a recipe for some eggs on a tortilla!
This actually happens to be one of my favorite breakfasts. I like it because I can pop it in the oven in the morning, go get ready for work, and then come back to the kitchen and it’s ready! The tortilla gets crisp and slightly crunchy- almost like a tostada. It tastes so good with the warm egg on top. I just pick it up and eat it like pizza.
Tortilla Con Huevos
- Corn tortillas
- Seasonings like salt, pepper, Italian seasoning or chili powder
- Toppings such as green onions pictured above, and/or salsa- salsa is definitely good.
- Cooking spray
Preheat your oven to 350 degrees
Spray a small cookie sheet with your cooking spray.
Place the tortillas down, then carefully crack an egg on top.
I like to break my egg yolk up a little so it’s spread on the whole tortilla.
Season the egg with your seasonings Tip: To keep the egg from spilling off of the tortilla, place some foil underneath and shape it so it holds up the edges of the tortilla.
Pop it in the oven ad bake for about 10 minutes or so, depending how well done you want your egg. Top with some salsa or onions, or what ever else your heart desires!
