Crispy Baked Zucchini

Hello everyone! It’s super easy recipe time! This week has kept me pretty busy and I haven’t really been home to cook dinner all week! When I do have time to cook during my busy weeks, I am usually too tired to do anything fancy. But I still gotta eat and there’s really no reason to go to the local Fat Fast food place.

So for those of you who know how it feels to be too tired to cook, here’s a super easy zucchini recipe for those kind of nights. It’s healthy and all you have to do is cut, season, and bake. I just threw this together the other night and popped it in the oven and it turned out pretty good! This veggie dish along with your favorite easy main course, will keep you healthy- and relaxed :)

Crispy Baked Zucchini

Ingredients:

  • 1-2 large zucchinis (1 fed the two of us, but if you’re really hungry make 2!)
  • Seasonings like basil, pepper, garlic powder, parsley
  • Italian seasoned bread crumbs
  • Parmesan Cheese
  • Olive oil cooking spray

To Do:

Pre heat the oven to 375 degrees.

Slice the zucchini into round, thin slices.

Lay them out on a baking pan pre-sprayed with olive oil (Olive oil cooking spray is the best thing ever)
Lightly spray the tops of the zucchini with some olive oil as well.

Generously season with basil, Italian seasoning, pepper, parmesan cheese, garlic powder, and lastly with bread crumbs.
Bake for about 15-20 minutes, or until crispy and browned.

That’s it! Yum!

    Yummm:) I love zucchini–my mother used to fry it…this looks so much healthier!

      Oh but it is! 😉 To give it more of a “fried” feel,(with out the frying), try dipping each piece into egg, then coat with bread crumbs, then bake. mmmm..

    Ooh, I have a similar recipe, except I saute the zucchini with a little bit of olive oil and onion. So easy and so good!

      Sauted zucchini is my favorite way to make it. I’ll have to try it with onions next time!
