Waldorf Chicken Salad Sandwich

It’s Summertime and man, is it hot out! Where I live, it gets almost to 90 degrees and I’m boiling… I feel bad for my friends up in the High Desert where it is 104! So I took the last four days off of work for the holiday weekend and it was really fun, but I must admit- it’s nice to be back at work in the super air conditioned office! ;)

This heat unfortunately alters my cooking habits because it’s just too damn hot to stand by the hot stove! That is why I made Waldorf Chicken Salad this weekend. I only had to boil the chicken, (which I turned on the pot and stayed clear away until it was done), and the rest of the ingredients are cold!

I wondered why it’s called “Waldorf” and it turns out (according to Wikipedia) that it was named after the Waldorf Hotel in New York City in the 1890′s. It’s traditionally made without meat and served as a light snack or appetizer. Well today folks, you are going to learn how to make it for a meal (A really good one too)! By the way- I took out the mayo and used some plain yogurt instead to make it even better for you! (In my opinion it tastes even better!) Now on with the recipe!

Waldorf Chicken Salad Sandwich

(I measured everything by eye and made enough for leftovers, so I will try and give you a general idea of how much of each thing to use… it’s really up to you on how much you want to make)

Ingredients:

1 Large chicken breast
1 Red apple, cut into small squares 
About a half a cup of chopped celery
A large handful of red grapes- each grape sliced in half
About half of a red onion, finely chopped
A handful of chopped walnuts or pecans
About 1/2 cup of low fat plain yogurt
Salt, pepper
Bread 

To Do:

- Boil the chicken until fully cooked. Let it cool enough until you can chop it into small pieces.
- Add all of the above ingredients together in a large bowl and stir it up. 
- Chill the salad in the fridge for about 2 hours.
- Once it’s nice and cold, put some in between two slices of wheat bread and enjoy the refreshing taste of the Waldorf Chicken Salad Sandwich! 

Here’s a tip: When I ate my sandwich it was hard to keep everything from falling out of the bread- try wrapping it in a paper towel or napkin (like you would eat a cheese burger from a fast food place) and roll it down as you eat. 

I’m such a Waldork for Waldorf… heh heh yeah… This is one of my favorite summer recipes- hope you enjoy!

    Wow Tessa, this looks really good. I cant wait to try it. Sans walnuts/pecans though. But the celery will still give me the (kr)unch (ha ha) that I like. Want a fast, easy and tasty recipe for Risotto? I found a way to make it without the time and labor usually involved and its killer!
