New Year, New Resolutions! (And 10 healthy recipes)

January 1st is a great time to start fresh, make new goals and set you sights high for the future.  As I write to you today on a stunningly gorgeous, 75 degree New Years Eve day (oh So Cal, you so cool),  I thought I would take this opportunity to go over my New Years Resolutions and share with you my top 10 healthy recipes from the past year.  

 I believe in always making goals, weather it’s short-term or long-term, just always have a goal in mind. Every time I really set my mind to something, I always achieve it. I hope you have some great goals in mind for the new year, here are my resolutions (which are now set in writing so I have to accomplish them!)

1. Lose 10 pounds. 
I always set this goal for myself, but this is the one that usually falls though the cracks. This time I am sticking to a super healthy diet and exercising at least 5 days a week, if not more.  I am sure this is a popular resolution  among many people, so if you are in the same boat as me- let me know! I plan on making a new tab on my blog where I will periodically post about what’s working and how my goal is coming along. I would be uber happy if you stopped by once in a while and let me know how your goal is coming along too!

2. Blog more.
I get so busy in my current job that I often find myself slacking on posting new recipes. I plan to improve the look and feel of this blog within the next year and post more often. I love cooking and sharing recipes and I need to save time in my life not only for work, but for doing what I love. 

3. Save money.
By this time next year, I will save enough money to take a vacation to Italy in 2013. Yes, you heard it, I am officially going on a European vacation for the first time! Italy is my main destination (as I have family members who live there) and I will also visit some of the surrounding countries. Can’t wait!

BREAKFAST

For breakfast, try a healthy Greek breakfast burrito.
Ingredients include egg, feta cheese, sun dried tomato, and spinach.

Here’s another healthy breakfast idea: Baked eggs.
Ingredients include: egg, ham, tomato, and seasonings. 

SNACKS

Fresh and healthy popcorn.

Healthy popcorn. It’s really delicious without the butter, plus you can be creative with the seasonings!

Bruchetta. A fresh and flavorful Italian appetizer. 
Ingredients include: Roma tomatoes, basil, olive oil, mozzarella cheese, salt and pepper.  

MEALS

Spaghetti Squash- A low-carb, healthy alternative for pasta.
Ingredients include: Squash and sauce. Try it with some ground turkey meatballs or sauteed veggies too.

Everything Green Soup. A Super healthy detox soup filled with so many vitamins, your body will be happy.
Ingredients include: Broccoli, spinach,  garlic, parsnips, onion, ginger and more!

Pesto Turkey Burger. A great way to get your protein. It’s so good, you can eat it with our without the bun!

Waldorf Chicken Salad. In this recipe, I swap out the mayonnaise for non-fat yogurt. Tastes better and is better for you!

Tofu Lettuce Wraps. These can be made with tofu or chicken and can be a great low-carb snack or meal. The peanuts add just the perfect amount of crunch!

DESSERT

Poached Pears. If you are craving something sweet, it’s okay to splurge sometimes. Especially if it involves a heathly pear!
Ingredients include: Pears, red wine, sugar and almond milk ice cream.

    Take me with you to Italy! I love you and I hope you have an awesome time tonight! P.S. let’s try to get together and actually craft soon, yeah? The babies are getting older so it’ll be easier haha.

    Hello, I just found your blog and I had to comment saying how nice I think it is! I’m looking forward to your food posts, but I must say I liked reading your goals for the new year. Somehow reading other’s goals always motivates me…haha!
