Tomato Basil bites

It is Christmas Eve eve, and I bet a lot of you are like me and are finishing up on wrapping presents preparing items for the upcoming family meals and baking cookies (I’ve been baking LOTS of cookies). In honor of the holidays, I thought I’d share with you a quick and easy appetizer that can be prepared in a flash and make your friends and family happy. Plus- they happen to sport the colors red and green :)

Tomato Basil Bites


  • 1 baguette, wheat or sourdough are the best
  • 1 can of diced tomatoes
  • Mozzarella cheese, sliced
  • Fresh basil leaves
  • Salt and pepper

To Do:

Slice up the baguette and lay the pieces out on a cookie sheet.

Next lay down a  piece of cheese, then a couple of fresh basil leaves, followed by a few pieces of tomato. Top with salt and pepper.

Broil on your oven for about 5 – 7 minutes, or until the cheese gets all melted.

See, I told you it was easy!
