Quick Sauted Spinach

Spinach is so good as a salad and we try to eat it as much as we can. I decided to switch it up a little last weekend and saute the spinach with other delicious veggies. Easy, quick, and healthy. A side dish success!

Spinach is a real super food! It’s filled with so many vitamins, it’s not even funny. I took the following quote off of Wikipedia about the nutritional value of spinach so you can see for yourself:

Spinach has a high nutritional value and is extremely rich in antioxidants, especially when fresh, steamed, or quickly boiled. It is a rich source of vitamin A (and especially high in lutein), vitamin C, vitamin E, vitamin K, magnesium, manganese, folate, betaine, iron, vitamin B2, calcium, potassium, vitamin B6, folic acid, copper, protein, phosphorus, zinc, niacin, selenium and omega-3 fatty acids. “WOW!

Quick Sauted Spinach

Serves 2

Ingredients:

1 Tablespoon olive oil
1/2 of an onion, sliced
2 Garlic cloves, chopped
1 Cup chopped portabella mushrooms
1 Pound of fresh washed spinach
A pinch of nutmeg
Salt and pepper

To Do:

– Saute the onion, garlic and mushrooms in the olive oil in a large pan. Cook until the mushrooms and onions are tender (about 5-7 minutes)
– Add the spinach, salt, pepper and nutmeg.
– Turn the heat up to high and stir constantly until the spinach starts to wilt down.
– Serve it hot! Top it with roasted pine nuts if you like.
