We’ve been using our barbecue a lot recently. The weather has been so nice that we just can’t help eating outdoors on our porch. I enjoy the fact the weather is so nice in January that I can hang out in shorts and barbecue dinner, but I do feel a little bummed that I haven’t been able to warm up my house with the oven everyday because it’s not even cold (like winter is supposed to be, right?). But don’t get me wrong- I’m not complaining about perfect weather. 😉 Besides, my boyfriend is the master of his grill, which means I get to relax while he makes ME dinner!
Citrus Marinated Chicken
- 2 Boneless-skinless chicken breasts
- 2 Oranges
- 1 Lemon
- A handful of dried rosemary
Marinate the chicken for 30 minutes in: the juice from the oranges and lemon, the zest from one orange*, rosemary and pepper.
Grill the chicken on the barbecue for about 20 minutes, or until the inside of the chicken is no longer pink.
*The orange zest made it especially flavorful. Just grate the orange peel right on the chicken!
This citrus marinated chicken can also be cooked in the oven or on the stove-top, but nothing beats the the taste of grilled chicken!
