Roasted pepper salad with cilantro lime dressing = fantastic!
Looking for a little refreshment in the summer heat? This salad sure hits the spot! This dressing is super simple to make and it goes well on any type of salad. I am all for light homemade dressing- You can control the salt content and add any herbs and spices you like. This salad dressing recipe below has got to be one of the easiest I’ve made to date!
Cilantro Lime Dressing
- 1 Lime
- 2 tablespoons chopped cilantro
- 1 tablespoon olive oil
- Squeeze the juice from the entire lime into a small bowl.
- Mix in the olive oil, cilantro, a little bit of zest from the lime peel, salt and pepper to taste.
- Make a salad and toss it with the dressing. For my salad I used spinach, roasted green and yellow peppers, cucumber, tomatoes and sunflower seeds. Try throwing in a handful of black beans too!
These days we love grilling outside and keeping the heat out of the house. This salad was perfect because we grilled chicken and roasted some peppers for the salad all at once.
