Raw Peanut Butter Oat Bites

These Raw Peanut Butter and Oat Bites are a perfect energy snack! I’ve made these three times now and they are a huge hit with the boyfriend. Reason number 1: they taste like peanut butter. Reason number 2: they require no effort on his part; his favorite kind of food is the kind he can just pick up and eat.

I’ll usually make these on a Sunday night so that we can have snacks for the rest of the work week. It takes about 30 minutes to make (including clean up time) but I think it’s worth it because store-bought peanut butter bars can be expensive and filled with preservatives and sugar. This recipe makes about 10 small bars.

Raw Peanut Butter Oat Bites

Ingredients:

  • 1 Cup old-fashioned oats
  • ½ Cup shredded coconut
  • 1 Tablespoon chia Seeds
  • 1 Tablespoon ground flax seed
  • ½ Cup natural peanut butter 
  • ¼ Cup honey 

To Do:

  • Start by running the oats through a food processor or blender until the oats are finely chopped (you can skip this step but the bars tend to hold together better when the oats are in smaller pieces).
  • Combine all ingredients in a medium bowl until sticky.
  • With your hands, form the mixture into small balls, then flatten them so they make  a cookie shape.
  • Store them in the refrigerator - they last longer and hold together better when cold.

    chia seeds? I generally know what you are talking about but this one got me? What is it and can I get it at my normal grocery store? What is it good for? Should I just skip that part – you know how picky I am :)

    So Chia seeds are pretty new to me too! I discovered them about a month ago- they are rich in fiber, antioxidants, iron, potassium, calcium, phosphorus, zinc, and manganese. No other grain has more protein and omega-3 than a chia seed! They are great in smoothies (they are kind of weird and turn into a gel, which makes them really filling). I buy them at health food stores (such as Sprouts, Trade Joes) in bulk.

    I used them in this recipe for the health benefits, but you can definitely omit them. One of my future recipe posts will ‘splain more about the uses of Chia :)

    Very interesting! I am going to give it a shot. Our grocery store has cool thing with peanuts in it and you flip it on and grind your own PB. Lexi loves it. We are always looking for healthy, portable snacks for her since she has such a long day at school. I will make these with and without and let you know how it goes! I am toying with the idea of the red lentil soup too but it scares me. We have to wait for the weather to cool down anyway so maybe these will give me the courage to try the soup!

      Red lentil soup is my favorite!! Definitely for cooler weather though.
