Who spends their weekend before Thanksgiving slaving over a hot stove all day long? Me, of course! I know that I have a lot of cooking ahead of me in the next few days but I still decided to spend all day making chili and cornbread anyway. I’ve never made homemade chili before… no wait, I have once but it wasn’t that memorable. My friends and I are having a chili cook-off in a few weeks so I have to get ready!
The recipe I am making is a mix between a recipe for vegetarian chili from Cooks Illustrated magazine and a few other beef chili recipes I ran across here and there. I have a feeling it will be good! I will post the recipe next week!
In the mean time, I wanted to share with you what I am making this year for Thanksgiving. My mom and I are sharing cooking responsibilities this year and she is handling the Turkey, potatoes and desserts. I will be providing a few side dishes and appetizers. Appetizer: Bacon Wrapped Dates
These are probably the best things in the entire world. You will WOW your family. All it takes is dried dates, cheese and some bacon.
Bread: Irish Soda Bread
This isn’t a traditional Thanksgiving bread recipe but I wanted to make it because it’s so good! It’s also a lot healthier than normal white bread rolls because it’s made with wheat four and flax.
Salad: Cucumber Artichoke Salad
This is an easy, throw-together salad that I like to pawn off on others who want to help. Ask someone to cut up the veggies, mix them with the dressing and it’s done!
I hated stuffing my entire life. I made this recipe two years ago and it changed my mind. (I guess I hated the Stove Top, plain boxed kind). This is pretty darn good and the family loves it.
Side dish: Zucchini and Goat Cheese Rolls
This is one of my first recipes on this blog. This year for Thanksgiving I will add in some diced sun-dried tomatoes.
Side dish: Pomegranate Glazed Carrots
