Need an idea for a last minute homemade gift? Are you all out of ideas, money and time? Well look no further, this pumpkin butter is really easy to make and it is a creative homemade gift that costs nearly nothing per person. Plus, it’ a gift that’s out of the norm, like a typical plate of cookies.
Pumpkin butter is like jelly so use it on toast or english muffins for breakfast. I also recommend using it to cook chicken. You can take about a half cup of it and spread it over your chicken before baking, or chop up some onions, carrots and leeks, add it to the pumpkin butter and use that as a topping for your chicken.
It’s funny, I actually came up with gift idea because I was forced to. I bought all the ingredients I needed to make these really good lime and ginger sugar cookies and I go to preheat the oven and OOPS!… the oven broke. My landlord said the oven was 22 years old and it can’t be fixed! I won’t be getting a replacement for another 2 weeks! UGH I was devastated! So I frantically searched the web for an alternative homemade gift idea for my coworkers and friends. I came across this recipe for pumpkin butter on a blog called Closet Cooking and gave it a go. I tripled the original recipe and made enough for 7 gifts!
So a pack of 8 Pyrex jars cost $20, the 2 cans of pumpkin puree cost about $6, the apple cider and sugar cost about $4. Total cost per gift: $4.28! Now that is great!
This recipe makes 7 cups, perfect for 7, 1-cup jars
- 6 Cups pumpkin puree
- 3 Cups brown sugar
- 1 and 1/2 Cups apple cider
- 3/4 Teaspoon cinnamon
- 3/4 Teaspoon nutmeg
- 3/4 Teaspoon cloves
- 7, 1-Cup glass jars for gift-giving
- Combine everything in a pot and simmer, stirring occasionally, until the sauce has thickens up – about 1 hour.
Tip: (I learned this the hard way) Make sure you place a lid on the pot when you start to heat it. I was casually washing dishes and all of a sudden exploding spurts of lava-hot pumpkin butter came flying at me and my entire kitchen! It boiled with big, exploding bubbles for about 10-15 minutes, then when it reached the right temperature it continued to simmer nicely.
This pumpkin butter is so yummy, I think I will just cut this recipe in half and make it for myself sometime soon.
