Paleo Fried “Rice”
This “rice” dish blew me away at how tasty it was! The reason “rice” is in quotations is because this dish is made from cauliflower! Cauliflower is an okay vegetable in my book, not one of my favorites but I’ll still eat it if it’s cooked right. I was a little skeptical if I would enjoy it as a substitute for rice. Fried rice is one of my favorite (of many) recipes I like to make, which also means one of the recipes I miss eating while I’m on a Paleo diet.
I belive I have just changed my rice-eating habits forever! This dish tasted very similar, if not better, than normal fried rice. The good part about it is that it’s lighter, I can eat more of it if I want to and not feel over-stuffed with carbs and it’s healthy! Cauliflower IS the new rice.
We ate this fried rice along with some healthy orange chicken last night. I was super proud of myself after making this meal. I ended up running up and down the hallway trying to tear Matt away from his computer so he could come see (and taste) this concoction I threw together (luckily we were the only ones home).
Paleo Fried “Rice”
Makes 4 servings
Ingredients:
- 1/2 Head of cauliflower
- 1 Large carrot
- 2 Cloves garlic
- 1/2 Yellow onion
- 2 Eggs
- 3 Tablespoons soy sauce
- 2 teaspoons garlic powder
- 1 Tablespoon coconut oil
- 2 Tablespoons chopped chives
- Pepper to taste
To Do:
- Start by chopping the carrot, onion and garlic into very small pieces.
- Heat the coconut oil in a large sauce pan then ad in the chopped veggies. Add in some pepper and cook until soft.
- While the veggies are cooking, Cut the half head of cauliflower into large chunks. Run it through a food processor for a few pulses until it becomes a fine grain-like texture. Put the cauliflower in a microwave-safe bowl.
- When the veggies are just about done, fry the two eggs. I used the same pan to save on dishes for later. Be sure to scramble the eggs around and chop it into small chunks.
- While the eggs are cooking, microwave the bowl of cauliflower for 2 minutes.
- Add the cooked cauliflower to the saucepan with the veggies and eggs. Add in the garlic powder, soy sauce, chopped chives and more pepper. Stir well.
- Serve it along side a paleo main course, like my orange chicken (recipe coming soon!) or add in some cooked, chopped chicken to make this a main course on its own!
