Just the sound of “thai peanut sauce” has always been daunting to me. I’ve had it before – usually it’s served over chicken skewers at cocktail parties. It was just so unfamiliar to and sounded hard to make that I never tried… well guess what? I decided to try it out this weekend and it turned out to be really easy to make! SO easy, in fact, that this recipe is is categorized as “Super Easy” on this blog – for those who prefer to make foods that take little effort.
This sauce goes great on any type of chicken, shrimp, rice or veggies. I made a bowl with shrimp, rice and veggies and poured this sauce over it – the flavor was a perfect match! I used some of the leftover sauce the next day and poured it over grilled turkey burgers and topped it with fresh chives. The possibilites are endless, I tell you!
Thai Peanut Sauce
Makes about 3 cups
- 1/2 cup smooth natural peanut butter*
- 1 8 ounce can full fat coconut milk
- 1/4 cup natural honey
- 1/4 cup fresh lime juice
- 1/4 cup soy sauce
- A couple dashes of garlic powder and red pepper flakes
*I prefer to use Lara Schudder’s creamy natural peanut butter- it is super smooth (perfect for this sauce), it’s really tasty and if you look at the ingredients list it just says “peanuts.” Now THAT’S peanut butter. The few minutes you have to spend stirring in the oil is definitely worth it.
Put everything in a food processor and mix it until it is smooth (I told you it was easy).
