Sometimes you just want an easy-to-prepare meal that’s ready in less than 10 minutes so you can eat and get back to your to-do list faster. Burrito bowls are one of my favorite quick meals to make. All you need is some leftover cooked chicken and a few basic pantry items.
We like to get a pack of boneless, skinless chicken breasts and grill the whole pack on the barbecue. We use the leftovers for things like chicken salads, tacos or… chicken burrito bowls.
Chicken Burrito Bowls
- 1 cup quinoa or rice
- 1 can black beans
- 2 leftover chicken breasts, chopped into pieces
- diced onions, fresh or grilled
- Shredded cheese
- Salsa or hot sauce
Cook the quinoa (or rice), place it in the bowl first
Microwave the beans and chicken and add those to the bowl.
Add everything else and you’ve got yourself a burrito bowl!
