A post about traveling seemed appropriate because we’re going to Europe tomorrow! This is my first trip out of the country and our longest vacation ever! So excited! I won’t be posting any recipes here for a few weeks because I will be enjoying the many restaurants of Germany, Italy, France and the Netherlands! I hope to come home with a lot of new recipe ideas and inspirations.
I am all about saving money and staying healthy. That’s why when I travel I usually prep DIY snacks and meals in advance. Here are some of my favorite snacks to make that travel well:
This is a copycat recipe for the oh-so-delicious Larabars. They are made with nuts, coconut flakes and dates that hold it all together. You can get creative with the type of nuts you use. All you need is a food processor so cleanup is easy!
Made with simple ingredients, these peanut butter beauties take about 30 minutes to make (including clean up) It’s totally worth it because store-bought peanut butter bars can be expensive and are filled with preservatives and sugar.
Just like the no-bake energy bars above, these are made the same way. Adding a few extra ingredients like cocoa powder, makes these bars crazy delicious. They are good for dessert or a healthy, energizing snack for your sweet tooth!
Spend a little time baking these and you will have a large batch of protein bars that you can eat or freeze. Each bar has only 167 calories, a bunch of good-for-you nutrients and 8 grams of protein!
These muffins are made in an nontraditional way – without flour, butter or oil! Mix bananas, yogurt, oatmeal and a few other ingredients for super-easy muffins that taste great cold or warmed up.
