Homemade Spaghetti and Turkey Meatballs

I would say this is one of my easy recipes- only because I have done it so many times. It is still always impressive to others when I share that the sauce and meatballs are made from scratch! It can take about an hour of prep and cooking time, but it’s SO worth it. 

This is another one of those “A little of this, a little of that…” recipe- with out exact measurements. But it gives you the freedom to experiment with different flavors and ingredients which I find fun :)

Homemade Spaghetti and Turkey Meatballs

Ingredients:
For the Meatballs:
1 lb ground turkey (can serve about 4 people)
1 egg
1 cup bread crumbs (any kind- this time I used Panko)
About 4 cloves of garlic, minced
About half an onion, diced
Fresh seasonings (like basil, oregano, thyme, rosemary, sage- what ever you have)
A handful of fresh parsley
(You don’t have to use fresh herbs- it just tastes WAY better)
Fresh ground pepper
Pinch of salt

For the sauce:
1 large can tomato sauce
1 or 2 cans of diced tomatoes
1 small can of tomato paste
About 4 cloves of garlic, minced
A heaping pile of fresh or dried basil
Other fresh herbs if desired (like oregano, parsley, rosemary)
Fresh ground pepper to taste
Secret ingredient: a heaping spoonful of brown sugar

You will also need:
Spaghetti
Parmesan cheese as a topping, if desired

To Do:
Start by making the sauce:
– Combine everything in a pot (except for the sugar) and simmer on a super low flame.
– Let it simmer for 30 minutes to an hour, stirring occasionally.
– Try adding other things to your sauce, like diced carrots, chopped broccoli, chopped zucchini. I love a hearty veggie sauce :)

While the sauce is cooking, prepare the meatballs
– Combine everything in a bowl as pictured below

– Now it’s time to get down and dirty with your hands! Mix everything together and shape into balls.
– Place them on a lightly greased pan and cook on a medium heat, turning them occasionally, until each side turns brown.
– You can also bake the balls at 350 degrees for about 10-15 minutes. Until they are no longer pink inside. (which ever you prefer)

– Boil some water and cook your spaghetti according to the box instructions.
– When the sauce is just about done, add the sugar and do a little taste test. The sugar takes away the acidity from the tomatoes and mellows out the flavor. Add as much as you want if you like a sweeter sauce.

When you pasta is done, serve some on your plate, top with meatballs and the sauce and enjoy!
