Irish Soda Bread with Flax

Baking is not one of my specialties, only because you have to be so exact on ingredients. I am more of a “little of this, little of that” kind of cook, so baking doesn’t always work out for me. It’s super easy to make, there’s no yeast involved.

Irish Soda Bread with Flax

Ingredients:

  • 2   1/4 cups white or wheat flour (I made it both ways and both were delicious!)
  • 1/2-cup ground flax seed meal
  • 1/4-cup sugar
  • 1  1/4 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1 cup cold buttermilk
  • 1 tablespoon ground caraway seed
  • 1 cup large raisins
  • 5 tablespoons cold Irish butter, cut in cubes

To Do:

  • Preheat your oven to 350 degrees.
  • In a large mixing bowl, whisk together all of the dry ingredients: flour, sugar, ground flax, baking soda, salt, and caraway.
  • Cube the butter and work it into the dough with your hands, until it becomes a crumbly texture.
  • Gently stir in the buttermilk.
  • Stir in raisins
  • Sprinkle a little flour on a clean work surface and knead the dough about 6 times.
  • Form the dough into a round disk and place on a greased baking sheet.
  • Cut an X into the top (like the picture) and brush with buttermilk.
  • Bake for about 40 minutes, until the top gets browned and an inserted toothpick comes out clean.
  • Enjoy with butter, jelly, or plain because it’s that good.

It tastes best when it’s warm!
