So my boyfriend and I are working on getting buff before the summer comes this year. Now when I say buff, I mean get in shape, loose a few pounds and tone up a bit. We actually made this goal at the beginning of the year, and I admit I have fallen in and out of my scheduled “plan” a few times, but I always come back around. One thing I have generally stuck to is cutting back on the carbs- at least for dinner.
The way I look at it, carbs provide you with energy, and you need them to efficiently function during the day and to have enough energy for a good work out. When you eat carbs at night, they kinda just sit there in your belly and don’t get used up- which is no good when you want to drop a few pounds. So I eat my breads, rice, and pasta’s for breakfast and lunch, and just stick to protein and two veggies for dinner!

The other night for our low-carb dinner, I made roasted onions, sautéed garlic green beans, and a ground turkey patty topped with blue cheese. Below are recipes for both veggies! They are all really easy to make too. Most of my recipes are if you didn’t know…

Sautéed Garlic Green Beans
Ingredients:
- Green Beans
- Garlic
- Olive oil
- Seasonings such as: Italian seasoning, ground pepper, garlic salt, basil
To Do:
– Cut the ends of the green beans off, toss them in a steamer basket and steam for about 6 or 7 minutes.
– While they are steaming, mince up about 3-4 cloves of fresh garlic.
– Put about tablespoon of olive oil in a frying pan, and when you beans are nice and steamed, throw them in the pan.
– Add the garlic and all of your seasoning and saute on a med-high heat until they become nice and crispy.

Roasted Onions (probably the easiest of all)
Ingredients:
- Yellow onion(s)
- Olive Oil
- Seasonings like: pepper, Italian Seasoning, paprika, or even curry powder, get creative!
To Do:
– Pre-heat your oven to 350 degrees
– Slice your onions in rings, but leave the layers together, like pictured.
Lightly spray a baking pan with non-stick cooking spay
Place the onions on the pan and drizzle the tops with olive oil and seasonings
– Bake for about 20 minutes or until browned, turning them over once halfway through.
– Enjoy plain or use these to top your burger. (Mmm I love roasted onions)
