Roasted Red Pepper and Feta Scones

Drool… These scones are SO good. I’ve had this recipe on my mind for a while now and I was dying to make it. It was just too hot to use the oven all summer. The moment the outside temperature dropped by just a slight bit, I instantly  turned on the oven to make these puppies.

I figured out an interesting way to roast a red pepper inside the house, with out using the oven! I don’t remember exactly where I saw this idea… on some show on Food Network I think. First of all, you need a stove with gas burners. What you do is place the pepper directly on the burner and turn the flame on high. Get some long BBQ tongs and turn the pepper often, until all sides are evenly roasted and black. Once it cools enough to handle, take a butter knife and scrape off all or the black burnt part, and there you have a delicious roasted pepper. 

Roasted Red Pepper and Feta Scones

Ingredients:

2 cups of flour
1 tbs baking powder
1/2 tsp garlic salt
4 tbs unsalted butter
3/4 cup of heavy cream
1 4oz package of feta cheese
1 egg
1/2 cup chopped green onions
1 red pepper

To Do:

– Pre-heat the oven to 400 degrees.
– Roast the red pepper (see above) and slice into small squares.
– Mix the flour, baking powder, garlic salt, and cubed butter by hand until crumbly.
– Mix in the heavy cream and the egg.
– Next fold in the feta cheese,  green onions and red pepper.
– Shape the dough into a round loaf, place it on an oiled cookie sheet.
– Using a large knife, slice it into triangular pieces (like a pizza!). 
– Bake for 20 – 25 min or until it browns on the top.
– Enjoy plain or dipped in tomato sauce. YOUM!!
