The Easiest Soup in the World

The title of this blog post is no lie. This soup takes takes less than 10 minutes to put together and it’s really tasty! All it requires is leftover chicken or turkey, broth and frozen vegetables.

I decided to make a whole turkey for the two of us last weekend. For one thing, they are on sale for 77 cents a pound right now AND, I never got to enjoy turkey leftovers for Thanksgiving or Christmas! I want my leftover turkey sandwiches!! I also saved the juices that the turkey left in the roasting pan. There was enough for about 3.5 cups of broth. I refrigerated it in a couple containers and used it as needed it to make gravy and this soup! I am a “Leftover Queen”!

A whole turkey is a LOT of food for two people so I ended up freezing half of the leftovers or else it would go bad faster than we could eat it. You know what you can do with leftover frozen turkey? Make soup!

The Easiest Soup in the World (Leftover Turkey Soup)

Ingredients:

  • Leftover cooked turkey or chicken (light or dark meat)
  • Broth (turkey, chicken or veggie broth)
  • About a cup of frozen veggie medley
  • Parsley
  • Pepper

To Do:

  • Heat the broth in a pot. Use as much as you want to eat.
  • Shred the meat into small pieces with your hands and add it to the heating broth.
  • Add the frozen veggies and let it simmer for a couple minutes. 
  • Add the parsley and pepper (and maybe a little extra garlic powder if you feel like it) and enjoy!

Other ideas: Try adding in pasta or cooked rice to your soup. You can also use fresh veggies, cubed potatoes or really any veggie laying around your house.
