ASIAN SALAD WITH HONEY-SESAME DRESSING

You know those salad kits that you can buy in the refrigerated section at the grocery store? There’s one that I really like and I found myself buying a lot – this Asian slaw salad. It comes with a cabbage slaw mix, dressing, almonds and crispy wontons. It costs about $3.99 (sometimes $2.50 when on sale) and that can add up for a salad that’s much cheaper to make myself!

So I decided to do just that. Make it myself. My at-home version tasted WAY better and was also slightly more healthy with homemade dressing and no wontons). The dressing is AMAZING and this recipe make enough for two rounds of salad. I see many of these salads in my future.

Asian Salad with Honey-Sesame Dressing

Serves 4

Ingredients:

For the dressing:

  • 2 garlic cloves, finely minced
  • 1 tablespoon fresh grated fresh ginger
  • 1 tablespoon of shallot, finely chopped
  • ¼ cup rice vinegar
  • 1 teaspoon Dijon mustard
  • 3 tablespoons brown sugar
  • 3 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon Sriracha
  • 2 tablespoon white sesame seeds
  • ⅓ cup extra virgin olive oil
  • 1 teaspoons sea salt
  • ¼ teaspoon finely ground black pepper

For the salad:

  • half of a head of cabbage, chopped into very thin strips
  • shredded carrots
  • 1/4 cup cashews
  • 1 tomato, diced
  • about 1/4 cup chopped green onions

To Do:

  • Combine all of the ingredients for the dressing into a small bowl. Whisk and set aside.
  • Put all of your prepared salad ingredients into a large bowl and toss with half of the dressing (save the other half for another day!)
  • Enjoy!
